As you may have noticed Dmitry Leus Cuisine is rather fond of dumplings. The best known variety for all of those who have grown up in Russia or Eastern Europe are Pelmeni. I have already given you Dmitry Leus Cuisine’s favourite types of dumpling from across the world, so here are some delicious sauces to go with them.

Firstly a vinegary, spicy one for those who like a bit of a kick with their juicy dumplings. Originating from Georgia, Adjika is a spicy pelmeni sauce and a favourite of Dmitry Leus Cuisine. So here goes, you will need: tomato - 3 kg, sweet pepper - 1 kg, garlic - 300 g, hot ostry chilli pepper - 300 g, salt and sugar to taste, vinegar, depending on which your favourite is, white wine or red wine vinegar - 300 ml.

Dmitry Leus Cuisine puts all of the ingredients through a meat grinder with a fine grid as grandma did, on the other hand, you can use any sort of blender or food processor. Put the mixture in an enamel bowl and leave overnight. Drain the extra liquid in the morning and see if seasoned to taste with salt, pepper and vinegar and enjoy on your dumplings!
