Aloo Wadi / Patra is a traditional authentic Maharashtrian snack recipe where a steamed vegetable leaf roll (Alu) is rolled up one after another after getting smeared with a masala & besan paste. Ingredients:
Aloo Leaves (Colocasia)
Gram Flour as per requirement
2 Onions, chopped
2 tsp Cumin Seeds
2 tsp Coriander Seeds
1 tbsp Black Pepper
1 tbsp Ginger Garlic, crushed
1/2 Cup Grated Coconut
2-3 tbsp Tamarind paste
1 tbsp Mix Masala
1/2 tsp Turmeric Powder
1 tbsp Jaggery
Coriander Leaves
Water
Salt to taste
Oil

२ tsp धणे
१ tbsp काळं मिरी
१ tbsp आलं लसूण, ठेचून
१/२ कप किसलेला नारळ
२-३ tbsp चिंचेचा कोळ
१ tbsp Mix मसाला
१/२ tsp हळद
१ tbsp गुळ
कोथिंबीर
पाणी

Method:
- Firstly, in a large pan boil some water.
To make the Masala paste:
- In a pan heat very little oil. Then add chopped onions, coriander seeds, cumin seeds, black pepper, ginger garlic crush and grated coconut. Saute everything till its color changes.
- Then add the masala in a mixer grinder and grind it to a coarse paste.
To make the Wadi:
- In a large bowl add the masala paste, gram flour, salt, coriander leaves, tamarind paste, mix masala, turmeric powder & jaggery.
- Mix everything well to avoid any lumps.
- Smear the vegetable leaves with masala and fold them as shown in the video.
- Put the rolls to steam for 20 minutes.
- Cut the rolls into small wadis and shallow fry them in hot oil.
- Aloo / Alu Wadi is ready to serve.
