This is the best fried rice recipe, ever! Asian Kabocha is a winter squash also sometimes called a pumpkin. The kabocha is sweet and tastes delicious in this fried rice recipe that includes thick cut bacon and fresh shrimp. The pumpkin itself including the skin is edible and it's good for you too!
Ingredients:
- 1 whole kabocha pumpkin
- 1/2 kabocha pumpkin
- 1/2 sweet yellow onion
- 1 egg + 1 Tbsp. water
- 1 Tbsp. Soy Sauce (LS)
- 3 pieces of shrimp
- 3 strips, thick cut bacon
- green onion stalks
- 2-3 cloves of garlic, minced
- 1 cup white rice
