Recipe for: Chinese Fried Shrimp Balls
Ingredients:
500g Raw Prawns
2 Spring Onions
1 Tbsp Cornflour
1 Egg White
½ Tsp Sesame Oil
1 Tbsp Oil
1 Tsp Ground White Pepper
80 to 100 Sheets Wonton Skins
Salt to Taste
Method:
1. Finely chop the prawns very finely and place into a mixing bowl.
2. Finely chop the spring onions and place in the bowl with the prawns.
3. Add the white pepper & the egg white.
4. Add the salt and cornflour, then mix the ingredients to form a paste.
5. Slice the wonton skins into thin strips.
6. Place the wonton skins in a bowl and toss to separate.
7. Take 1 Tbsp of the prawn paste and roll it over the bed of wonton skins.
8. Make sure the prawn balls are evenly coated with wonton skins.
9. Heat 1 litre of oil in the wok.
10. Place the prawn balls in the hot oil one at a time.
11. Deep fry until they turn golden brown. Do this is batches.
12. Remove from oil and drain.
13. Transfer onto a dish, garnish and serve with sweet chilli sauce.
