Madeleine and Anne-Marie share a healthy twist on a traditional Patatas Bravas recipe. This is the perfect party food, fantastic for a summer barbeque or simply a great snack if you want to indulge, while keeping it healthy.

INGREDIENTS
2 LARGE SWEET POTATO CUBED 1CM SQUARES
2 TBSP COCONUT OIL
1 CLOVE GARLIC - MINCED
2 TBSP HONEY
HALF TSP PINK HIMALAYAN SALT
2 RIPE AVOCADOS
CHILLIS (1 HOT OR MORE IF YOU LIKE IT SPICY)

RECIPE
CUT THE CUBES OF SWEET POTATO AND SOAK FOR 30 MINUTES IN HOT WATER

MIX TOGETHER THE GARLIC, COCONUT OIL AND HONEY. COAT THE POTATOES BEFORE POPPING ON A BAKING TRAY.

BAKE IN A VERY HOT OVEN (GAS MARK 8 OR 250C) FOR 30 MINUTES OR UNTIL THEY TURN GOLDEN AND CRISPY ON THE OUTSIDE AND SOFT ON THE INSIDE.

WHILST COOKING BLEND THE AVOCADO IN A PROCESSOR UNTIL THICK AND CREAMY AND ADD A SPRINKLING OF SALT AND THE CHOPPED CHILLI.

SERVE WITH WEDGES OF LIME OR LEMON, MIXING A LITTLE LEMON INTO THE AVOCADO TO STOP BROWNING.

SERVE WITH A SPRINKLING OF SALT.
