Ingredients:-
For the potato mix:-
400 gms potatoes
1 tbsp ginger garlic green chilly crushed
1 tsp mustard seeds
a pinch of asafoetida
1/4 tsp turmeric powder
10 nos curry leaves
2 tbsp coriander leaves
1 tbsp lemon juice (optional)
salt as required
For the batter:-
1.5 cups gram flour
½ cup water or as required
salt as required
For red chutney:-
3 tbsp red chilli powder
3 -4 garlic cloves
Salt as required
Fritters from the remaining batter
Method:-
The Potato Mix
Heat oil in a pan and add mustard seeds in it. Once the mustard seeds crackle add asafoetida, curry leaves, crushed ginger-garlic-green chillies mix and cook it for 30-60 seconds. Then add turmeric powder and turn the flame off. Add the finely chopped coriander, hand mashed boiled potatoes, lemon juice and mix it evenly followed by salt as per taste. Once the potato mix is cooled down to room temperature, make lemon-sized balls of the mix.
The Batter:-
In a bowl, take the sieved gram flour, salt, water and make a batter using fingers making sure no lumps remain in it.
The Frying:-
Dip the potato mix balls in the batter and fry them in oil on a moderate flame. Once golden brown, take them out of the oil and place them on a paper towel to drain the excess oil. Fry the remaining batter into fritters and let them cool down to room temperature.
The Red Chutney:-
In a grinder, take red chilli powder, garlic, salt, fritters and grind to a coarse powder.
Delicious Vada-Pav with red chutney is ready to serve!
