Caution - this recipe contains peanuts.
These are the best PB cookies you’ll ever have! We prefer to use one of the ‘Just Peanuts’ peanut butters, but use whatever you have in your kitchen.
Ingredients:
½ cup (125 mL) butter
½ cup (125 mL) sugar
½ cup (125 mL) brown sugar
1 egg
½ tsp (2 mL) vanilla
½ cup (125 mL) peanut butter
1½ cup (375 mL) pastry flour
½ tsp (2 mL) baking soda
¼ tsp (1 mL) salt
Method:
Preheat oven to 350ºF (180ºC).
In bowl, cream together butter & sugars until fluffy.
1 at a time; beat in egg, vanilla, and peanut butter.
Whisk together flour, baking soda and salt; stir into butter mixture.
Chill for 30 minutes.
Drop by rounded 1 Tbsp onto baking sheets, and squish with a fork.
Bake in 350°F (180°C) oven until edges are golden, 10-12 minutes.
Let cool on baking pan on a cooling rack for 5 minutes; then transfer to racks and cool completely.
Makes 24 cookies.
