Ingredients:-
Linguine Pasta (Flat ribbon pasta)
1 cup fresh basil leaves
2 tbsp. Pine nuts/Almonds, toasted
1 Garlic clove, crushed
2 tbsp. Grated Parmesan cheese
¼ cup Etra-virgin Olive Oil
Garnish:-
Basil flower and Parmesan cheese
Pink Himalayan salt to season
Method:-
1. Cook pasta in a saucepan full of boiling salted water until tender. Drain and return to pan.
2. Process basil, pine nuts, garlic and parmesan, scraping down sides occasionally, until almost smooth in a mixer/grinder.
3. With the motor running, add oil in a slow, steady stream. Season with salt and pepper.
4. Add pesto sauce to the pasta. Toss to combine and serve.
TIPS:-
1. Olive oil can be used instead of extra virgin as it has a very strong flavor.
2. Add basil pesto in an air-tight container and cover with a layer of extra olive oil. This way it can be stored in the refrigerator for up to 1 week.
