Mini Blueberry Snack Cakes For Two
Ingredients:
½ cup (125 mL) all-purpose flour
pinch of salt
½ tsp (2 mL) baking powder
3 Tbsp (42g) butter, softened
¼ cup (60 mL) sugar
1 egg
¼ tsp (1 mL) pure vanilla extract
2 Tbsp (30 mL) milk
½ cup (125 mL) blueberries
Method:
Preheat oven to 350ºF (180ºC)
Grease and flour two 1 cup mini Bundt pans.
In a bowl combine flour, salt, and baking powder.
In another bowl cream together butter and sugar.
Mix in egg and vanilla.
To the butter mixture alternate mixing in flour and milk.
Fold in the blueberries, and then spoon into the prepared Bundt pans.
Bake for 25-30 minutes.
Allow to cool for 10-15 minutes before removing from the pans.
