Banoffee pie has always been one of my favourite puddings - there is nothing like the combo of caramel, bananas, cream and chocolate! So I was sure I was going to miss it a lot being vegan . then I made this recipe and I couldnt have been more wrong! Its so yummy and a lot healthier than conventional banoffee pies while being almost as simple to make - yay!\r

Vegan banoffee pie recipe\r
Caramel\r
- 1 cup dates -medjool or dried- soak dried in 1/2 cup water \r
- 3 tbsp almond butter\r
- 1 tsp vanilla extr\r
- 3 tbsp maple syrup \r
- pinch salt \r
Base\r
- 1 cup almond meal\r
- 1 1/2 cups rolled oats\r
- 4 tbsp coconut oil\r
- 4 dates\r
- 2 tbsp water\r
180degrees 15min \r
Other\r
- 1 can coconut cream - refrigerated\r
- 2 tsp icing sugar\r
- 1 tsp vanilla extr\r
- 1 banana \r
- 1 tbsp dark chocolate melted \r
Refrigerate for 2-3 days \r
