Thanksgiving Turkey recipes can be done in many ways. I have many turkey recipes, and this is my recipe for smoked turkey. For this recipe, I used my Weber Smokey Mountain to smoke my turkey. Before I put my turkey on the smoker I made a turkey brine with ingredients that i had available. There is no reason to follow an ex recipe for a turkey brine. All that you want to do is make sure that whatever ingredients you use for your turkey brine are packed with flavor. I was able to brine my turkey for 12 hours. Closer to 18 hours would have been ideal. The ingredients i used for my turkey brine were:\r
* 1 Sliced Orange\r
* 1 Container apple juice concentrate\r
* 1 Cup Brown Sugar\r
* 4 Tbsp Salt\r
*1 1/2 Tbsp Garlic\r
* 3 Tbsp Rosemary\r
* 3 Tbsp Oregano\r
* 3 Tbsp Thyme\r
* 3 Tbsp Onion Powder\r
*6 Bay leaves\r
* 3 Oz Honey\r
The injection that i used was a Tony Chacheres Creole butter with jalapeno. I highly recommend Tony Chacheres Injectables. They can be bought at most stores for under $4 with the injection needle.\r
I stuffed the cavity with oranges, celery and jalapenos. You can use just about any fruit or vegetable to stuff the turkey cavity. I used what i had on hand that needed to be used.\r
The Weber Smokey mountain was used without the water pan. I used 1 chimney worth of hot coals and about 1/2 of a chimney un-lit. i also used 3 chunks of cherry wood.\r
