Ingredients for Vegan Mayo:
1/2 Cup Cashews, soaked
1 Small Onion, chopped
2 Garlic Cloves
1/2 tbsp mustard seeds
Juice of 1/2 Lemon
Salt to taste
Water as required
Ingredients for the filling of Sandwich:
1/2 Cup Cabbage, chopped
1/2 Cup Carrot, grated
2 tbsp Peas, steamed

Method of preparation for Vegan mayo:
In a mixer jar add cashew that is soaked in water for a minimum 5 hours.
Add onion, garlic, mustard seeds, Lemon juice, salt, water and blend it into a smooth paste.
Our Vegan Mayo is ready.
Method for the filling of sandwich:
In a bowl containing mayo add cabbage, carrot, peas and mix well.
Our filling is ready.
Assembling the Sandwich:
Toast some bread slices, add a generous amount of filling inside it and cover it with another slice.
Slit the sandwich from between and our Mayo sandwich is ready.
