Ingredients:
Water as required
300 grams Sweet Corn Kernels
Carrots, chopped
Cauliflower, chopped
Green Peas
Salt to taste
1 tbsp Butter
Spring Onion Greens, chopped
Corn Paste
Vegetable stock
Black pepper powder as required
For sweet corn paste:
Sweet Corn, Boiled
1 inch Ginger, Diced
Green Chillies, slit
Coriander a fistful
Method of preparation:
In a saucepan add water, keep 25% of corn kernels and boil the rest.
Once the corn is done strain them out of the water.
Keep the corn aside to cool down, add in other vegetables into the saucepan.
Add carrots, cauliflower, green peas and rest of the corn.
Once the vegetables are almost done add some salt to it and mix again.
Once the vegetables are cooked, switch off the flame and keep them aside to cool.
In a saucepan heat butter, add spring onion, and saute them.
Add in the boiled mixed vegetable, corn paste and mix them.
Add in the vegetable stock, water as required and mix well.
Add salt and black pepper powder and keep it to simmer for a while.
Once the soup turns to your desired consistency, switch off the flame and take it out on a bowl and serve with toasted bread.
For sweet corn Paste:
In a mixer jar add the boiled sweet corns, diced ginger, green chillies, coriander and grind them into a fine paste.
Add water while grinding if required and keep on checking if you've got the desired consistency.
Our paste is ready.
Garnish with spring onions/coriander and serve hot. Our Sweet Corn Soup is ready to eat.
