Medium-sized finely chopped onion 2
Green onion chopped 2 - 3
Oil 4 tablespoons ( for eggs )
Oil 1/2 cup ( for chicken )
Eggs, lightly beaten 4
Soy sauce 5 tablespoons
Oyster sauce 4 tablespoons
White pepper 1 1/2
Sesame oil 1tsp
Chicken, chopped 400g
Garlic 1 1/2 tablespoons
Finely chopped carrot 1 1⁄2 cup
Boiled rice 1 bowl

Mix 4 egg with 1/4 tsp salt and 1/4 tsp white pepper.
On low heat place 4 tablespoon of oil in large saucepan or wok. Cook beaten egg briefly, breaking into pieces. Remove and set aside.
Heat 1/2 cup oil in wok; add chicken to wok, along with garlic, and onion; stir-fry for 2 minutes.
Add 5 tbsp of soy sauce, 4tbsp oyster sauce, 1 1/2 white pepper and add carrots, tossing to mix well; stir-fry for 3 minutes.
Add egg and fold in; stir-fry for 1 minute more.
At last add rice, green onion, sesame oil and fold in to the mixture; ready to serve.
Set out additional soy sauce on the table, if desired.
