Ingredients:
2 cups All Purpose Flour (maida)
Salt
1 tsp Carom Seeds (crushed)
1 tsp Sugar
1 tsp Baking Powder
4 tbsp Curd
4 tbsp Ghee
1/2 cup Water (lukewarm)
Butter
For Kulcha filling/stuffing
3-4 Boiled Potatoes (mashed)
1/2 tsp Salt
1 Onion (chopped)
1 tsp Ginger (chopped)
Green chillies (chopped)
Red Chilli Powder
Coriander Powder
Cumin Seed Powder
Raw Mango Powder
Black Pepper Powder
Garam Masala
Coriander Leaves (chopped)
All purpose flour (maida)
Nigella Seeds
Sesame Seeds (white)
Coriander Leaves (chopped)
Method: Lets start with All Purpose Flour (maida) in the bowl then add Salt, Carom Seeds (crushed), Sugar, Baking Powder, Curd, Ghee, Water (lukewarm). Now first mix all together, then start kneading it (as shown in the video) use Ghee to make it soft and put in the bowl for 3 hours. Now, lets make Kulcha fillings/stuffing for which take Boiled Potatoes (mashed) then add Salt, Onion (chopped), Ginger (chopped), Green chillies (chopped), Red Chilli Powder, Coriander Powder, Cumin Seed Powder, Raw Mango Powder, Black Pepper Powder, Garam Masala, Coriander Leaves (chopped). Now mix all together then add All purpose flour (maida).
After 3 hours, take your dough and start kneading and folding with ghee (as shown in the video). Take a portion and make a roll, then stuff it with the portion of fillings, make a shape shown in the video and add Nigella Seeds, Sesame Seeds (white), Coriander Leaves (chopped) use roller to press it properly, use water on one side before putting into the Pan. Now you fry the Kulcha after sometime add Ghee (as shown in the video), take it out in serving plate. Do the same with remaining portion and your Amritsari Aloo Kulcha is ready to served.
