Jini dosa a fusion recipe between the popular south Indian cuisine with the popular street food of Mumbai. An ideal evening snack recipe which can also be easily extended for the late night dinner or perhaps for a morning breakfast recipe. Its a Special Dosa for all your loved ones.

Ingredients:
1 cup dosa batter
1 tbsp butter
2 tbsp onion, finely chopped
2 tbsp cabbage, finely chopped
2 tbsp capsicum, finely chopped
1 tbsp schezwan sauce
¼ tsp pav bhaji masala
A pinch of salt
2 tbsp processed cheese, grated
1 spring, green onion, chopped
Method: Let’s start with making the Stuffing for which, add Cabbage (chopped), Capsicum (chopped), Spring Onion Greens (chopped), Onion (chopped). Next, take the Dosa batter in the bowl and whip it correctly (as shown in the video) then add Salt to the batter and whip it again, now add Water then mix it properly. Next, for making Jini Dosa add Oil to the Pan smear it all over the Pan. Once the Pan is heated add the Dosa batter in pancake shape (as shown in the video) next add in Butter, Schezwan Sauce, Pav Bhaji Masala spread it all over Dosa then add Chopped Vegetables. Starting with Onions, Capsicum, Spring Onion and Cabbage also add Cheese (grated). Next, roll the dosa to other ends, transfer it the cutting board then cut it into three pieces and serve it in standing position with some Onion, Capsicum and Grated Cheese added in. Now your Mumbai street Jini Dosa is ready to serve.
