RAJASTHANI BOTI KABAB:

Ingredients

Tikka boti 1packet
Raw papaya 1 tbsp
Ginger garlic paste 2 tbsp
Red chilies paste 2 tbsp
Salt 1 tsp
Vinegar 2 tbsp
Oil 2 tbsp
Hung curd ½ cup
Allspice 1 ½ tsp
Dried fenugreek ½ tsp
Lemon juice 2 tbsp
Butter melted 2 ounce

Method

Marinate boti with all the give ingredients for 2 hours, put on skewers, roast in oven for 15 mins, brush with butter, further bake for 5 mins, serve immediately.

Double chocolate coconut oat meal cookies

Ingredients
Shortening ½ cup
Light brown sugar 1 cup
Eggs 2
Vanilla 1 tsp
Flour ¾ cup
Coco powder 2 tbsp
Baking soda 1 tsp
Salt pinch
Water ¼ cup
Oats 1 ½ cup
Chocolate chips 1 cup
Coconut flakes 1 cup
Walnuts ½ cup
Method

Beat shortening, brown sugar, eggs and vanilla until smooth. Sieve together flour, coco, baking soda and salt, add alternately with water to shortening mixture, stir in oats, ½ cup chocolate chips, ½ cup coconut and nuts, blending well, cover, refrigerate for few hours. Heat oven to 180 d, grease cookie sheet, drop dough with ice cream scoop, 4 inches apart, sprinkle cookie top with remaining coconut, remaining chocolate chips, lightly press into dough, bake for 12 mins or until set, cool slightly, remove from wire rack and cool completely.


Tawa pulao

Ingredients

Butter 4 ounce
Cumin seeds 1 tsp heaped
Chili garlic sauce 2 tbsp
Chopped onion 1 cup
Chopped capsicum 1 cup
Chopped tomatoes 1 ½ cup
Salt 1 tsp
Turmeric ¼ tsp
Chili powder 1 tsp heaped
Pav bhaji masala 3 tsp
Boiled rice 3 cups
Boiled peas ½ cup
Coriander leaves 2 tbsp
roasted papads 4

Ingredients for raita

Yogurt beaten 1 cup
Chopped onion 2 tbsp
Green chilies chopped 1
Coriander leaves chopped 1 tbsp
Salt ¼ tsp

Method

Heat butter on a large tava, add the cumin seeds, add the chili garlic sauce, onion, mix well , cook for 2 mins, add tomatoes capsicum salt, chili powder pav bhaji masala, ¼ cup water, mix well, cook for 5 mins, add boiled rice, boiled peas, coriander leaves, toss gently, cook for 2 mins, serve with raita and papad.
