Pathar-ka-Gosht - is a popular lamb dish, especially prepared in Hyderabad, Telangana, India. This dish is prepared with mutton by heating it on a wide stone, on a flame. The spices are added once the meat pieces are heated and served with Roti, onions and other ingredients. But, It can also be prepared at home with griller.
Ingredients:
(Serves 2)
- 1/2 kg Mutton(Boneless)
- 2 tbsp Raw Papaya Paste
- 1/2 cup Mint, Coriander & Green chilli Paste
- 1 tsp Cumin Seed Powder(roasted)
- 1 tbsp Coriander Seed Powder
- 1/2 tsp Black Pepper Powder
- 1/2 tsp Green Cardamom Powder
- 1 tsp Garam Masala Powder
- 1 tbsp Ginger Paste
- 1 tbsp Garlic Paste
- Salt
- 1/2 Lemon Juice
- Ghee
Method:
1. Take boneless mutton in a large bowl and add raw papaya paste to it
2. Now, add mint, coriander & green chilli paste to the bowl along with roasted cumin seed powder, roasted coriander seeds powder, black pepper powder, green cardamom powder, garam masala powder, ginger paste, garlic paste and salt over the mutton
3. Mix it all together and massage the meat with all the spices and herbs
4. Add lemon juice in the bowl; mix it and let it marinate for at least 2-3 hours
5. Now, over a hot grill pan, put the pieces of meat and let it grill over a high flame
6. Add Ghee from the top, overall the pieces of meat
7. Cook it on each side for at least 10-15 minutes, and after 5 minutes of cooking turn the flame to low
8. After around 10 minutes, turn the pieces of meat
9. Once cooked, take it out in a serving plate
