Jessica Hord is back with another mouthwatering recipe, and this one's deep-fried and cheesy-fied. These Cheesy Corn Fritters are as simple to make as they are delicious, and are sure to satisfy your fair-food cravings. Go ahead, get your comfort on.
You'll Need:
— 17 oz. cornbread mix & what it requires (Jessica used Jiffy.)
— 2 cups shredded low moisture mozzarella
— 15 oz. can of whole kernel corn, drained
— Cubes of low moisture mozzarella
Instructions:
1. Prepare cornbread mix according to instructions.
2. Stir shredded cheese and whole kernel corn into cornbread batter.
3. Heat oil to 350 degrees.
4. Fill a trigger ice cream scoop halfway with mixture. Press in a cube of cheese and top with more mixture.
5. Release into oil and fry until golden brown on both sides. Drain. You're done!
