Achari qeema
Ingredients
Mince ½ kg
Salt 1 tsp
Turmeric ¼ tsp
Chopped onion 1
Ginger garlic paste 1 tsp
Achari masala 3 tbsp
Yogurt 1 cup
Green chilies 10
Ginger sliced 2 tbsp
Coriander leaves 2 tbsp
Method
Marinate mince with 1 cup yogurt, salt, turmeric, achar masala, keep aside for 30 minutes, heat oil fry chopped onion till light golden add ginger garlic paste with marinated mutton, cover and cook on low flame when water dries add green chilies, coriander leaves, leave it on dum till oil floats on top, serve garnish with ginger slice and coriander leaves.
Chai masala :
Ingredients
Black pepper ¾ tbsp
Cinnamon 4
Cloves 16
Green cardamom 16
Ginger paste 4 tsp
Method
Put the pepper corns, cinnamon, cloves and cardamom in a spice grinder and grind to a fine powder, swift the powder into a bowl, add the dried ginger powder, mix well, store in an airtight container.
Ingredients for chai
Milk 2 cups
Tea leaves 2 ½ -3 tsp
Chai masala ½ tsp
Sugar 3 tbsp
Method
Put the milk and 2 cups water in a sauce pan, put over high heat and bring to boil, lower the heat to medium, add the tea leaves and chai masala, boil for 1 minute, add the sugar, when it comes to boil again, lower the heat, simmer for 2-3 minutes, strain into individual cups and serve hot.
Soya methi aalu:
Ingredients
Potatoes boil 2
Soya 4 bunches
Fenugreek 1 large bunch
Onion 2 large sliced
Salt 1 tsp
Button red chilies 8
White cumin seeds 1 tsp
Green chilies 4
Oil ¼ cup
Method
Heat ¼ cup oil in a pan fry onion till transparent add cumin seeds, button red chilies, salt, fry well add boiled potato cubes, soya, methi, fry well, do not cover add green chilies and juice of 1 lemon, serve with mooli paratha.
