Dum aloo is a potato-based dish. The potatoes usually smaller ones are first deep-fried, then cooked slowly at low flame in gravy with spices.


Recipe :

Ingredients :
Potato- 250 gm(small size)
Onion Paste-2 Small Size
Dry Red Chilli(without seeds)-6-7(soak in warm water for 5 mins & make a paste)
Curd-3 tbsp.

Preparation of Curd Mix:
Curd-3 tbsp
Turmeric Powder-1tsp
Kashmiri Red Chilli Powder-1tsp
Cumin Powder-1tsp
Coriander Powder-1tsp
Garam Masala-1/2 tsp

For Frying Potatoes:
Cooking Oil-As required for shallow fry/deep fry.

Cooking Process:
Add cooking oil in a Kadai. Take 4-5 tbsp oil for shallow fry or 7-8 tbsp oil for deep fry. Add potatoes into oil. Add 1/2 tsp salt & turmeric powder into it. Fry for 10 mins until golden brown. Keep potatoes aside. Reduce oil from Kadai because we do not require this much oil for gravy. In the same oil add bay leaf, cinnamon, cardamom to it. Add onion paste & fry for 5 mins in low flame. Add red chilli paste & fry for another 2-3 mins. Now add 1 tsp salt & curd mix. Fry in low flame. Always remember cook in low flame, after adding curd. Cook until oil separates. Add fried potatoes & cook for 5 mins. Add water as required. Cover & cook for 10 mins. After 10 mins check potatoes & cover for another 5 mins. After 5 mins add 1 tsp ghee & delicious dum aloo is ready to serve with rice/roti/paratha.
