Using fresh jackfruit to make a cake is a delicious and unique idea! Here's a simple recipe for a Jackfruit Cake:

Ingredients:

2 cups fresh ripe jackfruit, chopped and seeds removed
2 cups all-purpose flour
1 1/2 cups granulated sugar
1 cup vegetable oil
4 large eggs
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 cup chopped nuts (optional, such as almonds or walnuts)
1/2 cup shredded coconut (optional)
Cooking spray or extra oil for greasing the pan
Instructions:

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with cooking spray or a light coating of oil. You can also line the bottom of the pan with parchment paper for easy removal.

In a blender or food processor, puree the chopped jackfruit until smooth. Set aside.

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, beat the eggs until they are frothy. Add the vegetable oil and vanilla extract to the beaten eggs and mix well.
