Raw Banana(कच्चे केले) - 6 Pieces
Water(पानी) - 1-1.5 Glass
Green Chilli(हरी मिर्च) - 3-4
Ginger(अदरक) - Some
Coriander Leaves(धनिया पत्ती) - Some
Salt(नमक) - As Per Taste
Coriander Powder(धनिया पाउडर) - 1 Tsp
Turmeric Powder(हल्दी पाउडर) - 1/4 Tsp
Crushed Red Chilli Powder(कुटी हुई लाल मिर्च पाउडर) - 1/2 Tsp
Kashmiri Red Chilli Powder(कश्मीरी लाल मिर्च पाउडर) - 1/2 Tsp
Dried Mango Powder(अमचूर पाउडर) - 1 Tsp
Black Salt(काला नमक) - Some
Black Pepper Powder(काली मिर्च पाउडर) - 1/2 Tsp
Gram Flour(बेसन) - 2-3 Tsp
Ghee(घी) - 1 Tsp
Oil(तेल) - For Frying
For Masala:
Coriander Powder(धनिया पाउडर) - 2 Tsp
Turmeric Powder(हल्दी पाउडर) - 1/2 Tsp
Crushed Red Chilli Powder(कुटी हुई लाल मिर्च पाउडर) - 1/2 Tsp
Kashmiri Red Chilli Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Tsp
Black Pepper Powder(काली मिर्च पाउडर) - Less than 1/2 Tsp
Roasted Cumin Powder(भुना जीरा पाउडर) - 1/2 Tsp
Gram Flour(बेसन) - 1 Tsp
For Paste:
Ginger(अदरक) - 1-2 Inch
Tomato(टमाटर) - 3
Onion(प्याज) - 2
Garlic(लहसुन) - Some
For Gravy:
Oil(तेल) - 1 Serving Spoon
Fennel Seeds(सौंफ) - 1/2 Tsp
Whole Coriander Seeds(साबुत धनिया) - 1/2 Tsp
Cumin Seeds(जीरा) - 1/2 Tsp
Salt(नमक) - As Per Taste
Dried Fenugreek Leaves(कसूरी मेथी) - 1 Tbsp
Hot Water - 1-2 Cup
Fresh Malai(ताजा मलाई 2 Spoon
RECIPE:
For Kofta, keep the pan on the flame, put Water & Whole Raw Bananas in it. Cover it with a lid & give it two whistles. Then release the pressure & drain out the Water & keep in for cooling down. Then peel them & cut them into pieces. Put them in a bowl & mash them with the tomato masher. Then put chopped Green Chilli, grated Ginger, Coriander Leaves, Salt to taste, Coriander Powder, Turmeric Powder, Crushed Red Chilli, Kashmiri Red Chilli Powder, Dried Mango Powder, Black Salt, Black Pepper Powder, Gram Flour & some Ghee & Mix all well. Apply some Water to your palms & make small round-shaped balls. Wrap it with Gram Flour & keep it aside. Heat Oil in a Kadai or frying pan. Fry the Banana Koftas in oil, till they are evenly golden browned from all sides. Drain the fried kofta on tissues so that the extra oil is absorbed & then prick them with a fork.
For Paste, in a mixer jar, take some Onion & Garlic. Grind well & make a fine paste. Then squeeze the Water from the paste by filter & keep it aside. Take some Tomato & Ginger. Grind & make a paste & take it out in a bowl.
For Gravy, keep the pressure cooker on the flame, put some Oil, Fennel Seeds, Whole Coriander Seeds, Cumin Seeds & squeezed Onion paste & roast till it turns golden in color. Then put some spices like - Coriander Powder, Turmeric Powder, Crushed Red Chilli, Kashmiri Red Chilli Powder, Roasted Cumin Powder, Gram Flour & put Garlic Water. Cook until it gets dry. Then put Tomato & Ginger Puree, Salt to taste & cook till the tomato release the Oil. Then put Fenugreek Leaves & Hot Water. Cover & cook on a slow flame & keep it aside. Then put the fried & pricked
