recipe
1. preheat oven to 350F
2. to a pot of boiling water add medium-sized yellow potatoes cut into 1" thick cubes and cook for 10 minutes until softened enough to pierce with a fork, set aside
3. add 3 chopped chicken sausage links to a large pot over medium-high heat with 1 tbsp olive oil
4. cook for 5 minutes or so until brown and crispy, and then remove the chicken sausage and add 1 diced yellow onion, 3 large diced carrots, and 2 diced celery stalks
5. season with 1 tbsp minced garlic, 1/2 tsp sea salt, 1/2 tsp black pepper, and 1/2 tsp dried oregano and sauté vegetables until softened and fragrant
6. place 2-4 onion rolls cut in half lengthwise on a sheet pan with a light drizzle of olive oil and toast in the oven for 5-8 minutes until golden brown (option to flip these over halfway though for even toasting), set aside and let cool
7. add 6 cups of vegetable broth and 1 cup of heavy cream to the soup along with cooked potatoes and 1 cup chopped dinosaur kale
8. serve soup in a bowl with 1 tsp grated parmesan cheese and enjoy with a slice of toasted onion bread for dipping!
