This traditional dhaba recipe combines toor dal, masoor dal, and moong dal, cooked to perfection and finished with a smoking hot tadka of ghee, cumin, garlic, and red chillies. The secret to authentic dhaba taste is in the layered tempering!
📋 INGREDIENTS:
For Dal:
• Toor Dal: 1 cup
• Masoor Dal: 1/3 cup
• Moong Dal: 1/4 cup
• Green Chillies: 1 tsp (chopped)
• Ginger: 1 tsp (chopped)
• Turmeric Powder: 1/2 tsp
• Salt: 1/2 tsp
• Water: As needed
For Tempering:
• Oil: 2 tbsp
• Ghee: 1 tbsp + 1 tbsp (for final tadka)
• Cumin Seeds: 1 tsp + 1/2 tbsp
• Garlic: 1 tbsp + 1/2 tbsp (chopped)
• Ginger: 1 tbsp (chopped)
• Onions: 2 (chopped)
• Tomatoes: 2 (chopped)
• Turmeric Powder: 1/4 tsp
• Red Chilli Powder: 1/2 tbsp + 1/2 tsp
• Coriander Powder: 1 tsp
• Dried Red Chillies: 5
• Coriander Leaves: For garnish
• Salt: To taste
📝 STEP-BY-STEP METHOD:
1. Wash and soak all three dals for 30 minutes
2. Pressure cook dals with green chillies, ginger, turmeric, and salt for 3 whistles
3. Heat oil and ghee, add cumin seeds
4. Add ginger-garlic paste, sauté until raw smell goes
5. Add onions, cook until translucent
6. Add tomatoes, cook until soft and mushy
7. Add spices, sauté until oil separates
8. Mix in cooked dal with water, simmer 5-6 minutes
9. Prepare final tadka: ghee, cumin, red chillies, garlic, red chilli powder
10. Pour smoking hot tadka over dal
11. Garnish with coriander leaves
Serve piping hot with paratha, roti, jeera rice, or plain rice. This protein-rich dal is perfect for daily meals and tastes just like your favorite dhaba!
