🥗 Immunity-Boosting Salad: Beets, Goat Cheese & Walnuts
Ingredients (2–3 servings):
🟥 Beets — 2–3 medium (about 400 g), boiled
🧀 Goat cheese (soft, not too aged) — 100–150 g
🌰 Walnuts — 50–70 g
🌿 Fresh cilantro — 1 bunch (can be partially replaced with arugula or parsley)
Extra virgin olive oil — 3–4 tbsp
🧂 Salt — to taste
Instructions:
1️⃣ Cut the boiled beets into small rectangles and place them in a serving bowl.
2️⃣ Cut the goat cheese into similar or slightly smaller cubes and add to the beets.
3️⃣ Lightly toast the walnuts in a dry pan for 3–4 minutes until fragrant, then add to the salad.
4️⃣ Finely chop the cilantro and sprinkle it in.
5️⃣ Season lightly with salt (the cheese already adds salt).
6️⃣ Drizzle with good-quality olive oil and mix gently.
