Hi I'm Scott Mayer. I'm the mixologist here at Miami's oldest bar in Cabaret, Tobacco Road.

Alright so this is a drink I do call the Panamanian Mojito. We're going to start off with some fresh mint. Get a nice big stalk of it here. Go ahead and strip the leaves. We go ahead and give that nice little tap with the muddler. Basically all that muddling does is it releases the oils in the essential flavors of the mint. At this point we'll add a dash of Angostura Bitters, about an ounce of sugar syrup, and the juice of about one and a half limes.

Go ahead and to this we're going to go ahead and add some Zafra, 21 year old aged rum from Panama. Hence the Panamanian Mojito. Go ahead and give this some ice, and a good shake. Now grab a cocktail strainer, and a collins glass. Fill that to there. Go ahead and top that with a little bit of club soda. And since we've got it here, lets go ahead and garnish it with a nice sprig of mint. And for a mojito I like a nice big straw. So there you have it, our Panamanian Mojito.
