Ingredients-200 gm baigan cut 250 gm potatoes 1/2 tsp asafetida 1 tsp turmeric powder 1 tsp cumin seeds 2 tsp coriander powder 1/2 tsp red chilli powder 1 green chilli chopped Few coriander leaves 5-6 curry leaves Salt to taste 1tsp sugar 1 tomato 2 tbsp oil Preparation-Heat the oil,to it add asafetida,cumin seeds, chilli and tomato.Mix well. Next add the dry spices, turmeric powder,coriander powder,sugar and red chilli powder. Mix well.Now add the potatoes and baigan and toss well. Add salt and let it cook on slow flame . Garnish with coriander leaves
