Sour Cream Vegetables Over Brown Rice - Vegetarian Recipe
Serves 4
Rice (INGREDIENTS)
1/2 cup brown rice - washed
1 and 1/2 cups water
salt
Cook the rice in water and salt. Keep aside.
Sour Cream (INGREDIENTS)
1 cup cream
1/2 lemon - juiced
2 cloves garlic - crushed
1/2 tsp nutmeg powder
1/2 tsp mixed herbs
1/2 tsp mustard paste
2 tsp red chilly powder
1/2 tsp clove powder
salt - to taste
To the cream, add all the remaining ingredients. Mix well and keep aside.
Vegetables (INGREDIENTS)
2 cups mixed vegetables - carrots, cauliflower, broccoli, green onions, zucchini, baby corn, peas- chopped
1 tbsp oil
Heat the oil. Add 1 tsp salt. Saute vegetables. Stir over high flame till half cooked. Lower heat. Add the cream mixture. Stir well. Add 1/4 cup water. Boil once. Adjust salt. Remove from heat. Set aside.
Garnish -
10 almonds -slivered
Assemble -
Spread the warm rice on a serving dish. Pour the hot vegetable mixture over the rice. Garnish with almonds. Serve hot.
