1½ cups (180g) AP flour
1 teaspoon (5 mL) baking powder
1 teaspoon (5 mL) baking soda
½ teaspoon (2.5 mL) salt
3 ripe mashed bananas
¾ cup (150g) sugar
1 egg
⅓ cup (80g) melted butter

Method:
Preheat oven to 350ºF (175ºC).
Whisk together the flour, baking powder, baking soda, and salt.
Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth - don't overmix!. Scoop into muffin pans.
Bake large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.
Makes 6 Jumbo Muffins
