It just sounds hard… but these are super easy and oh so tasty.
Frangipane:
1/4 cup (50 g) granulated sugar
3 tablespoons (42 g) unsalted butter
1 large egg
1/2 teaspoon pure vanilla extract
1/2 cup (42 g) ground almond
1 tablespoon (12 g) AP flour
Crust:
1 pound (454 g) frozen puff pastry, defrosted
Filling:
2 pounds (900 g) baking Apples
Method:
Preheat oven to 400ºF (205ºC)
Frangipane: Cream the sugar and butter. Beat in the egg and vanilla extract until smooth. Add the almond meal and flour and beat until it forms a smooth paste.
Puff Pastry: Every brand is a bit different… You'll need to roll & cut into 12 pieces approx 3x5". Place them on a parchment lined baking sheet. Evenly divide the almond mixture between the pastries and spread a thin layer leaving about a ¼" (1 cm) border. Cover and refrigerate for about 15 minutes.
Peel and slice the apples into ¼" slices. Place in a large bowl and toss with the sugar and ground cinnamon. Remove the puff pastry from the refrigerator and lay the sugar coated apple slices on top of the frangipane, overlapping the slices.
Bake for about 15 - 20 minutes until the apples are slightly browned and the puff pastry is golden brown. Cool on a wire rack.
