Maharashtra is very well known for its street food. Misal pav is one of the popular, traditional Indian dish that falls under the street food category.It consists of spicy curry and is topped with some delicious misal chivda/sev or any farsan of your choice.

Ingredients:
2 tbsp. oil
1 tsp. mustard seeds
10-12 curry leaves
1/4 tsp. asafoetida
Coarsly ground paste of ginger, garlic and chilli
1 finely chopped onion
3 finely chopped tomatoes
1/4 tsp. turmeric powder
1 tsp. kashmiri red chilli powder
1/2 tsp. coriander and cumin seed powder
1 tsp. pickle masala (Achaar masala)
salt
4 cups water
1 1/2 cup sprouted moong (green gram)

Coriander leaves
Method:
- In a pan, heat 2 tbsp. of oil.
- Add mustard seeds, curry leaves, asafoetida, coarsly ground paste of ginger, garlic and chilli and saute it all properly in the oil.
- Then add 1 big finely chopped onion, finely chopped tomatoes, 1/4 tsp. turmeric powder, 1 tsp. kashmiri red chilli powder, 1/2 tsp. coriander and cumin seed powder and 1 tsp. pickle masala into the above ingredients.
- Cook the tomatoes till they are nice and soft.
- Then add a generous amount of salt into the ingredients.
- Once the tomatoes are nicely cooked, add about 3 1/2 to 4 cups of water to it and let the water boil for about 5-7 minutes.
- Add sprouted moong to the above ingredients and let it cook for about 5-6 minutes.
- Once the sprouts are cooked, add some coriander leaves to it.
- Serve the misal with some misal chivda sprinkled on the top.
