Murgh Malaiwala:
Ingredients:
Chicken karahi cut 750gm
Yogurt ½ cup
Lemon juice 1 tbsp
Ginger paste 1 tsp
Garlic paste 1 tsp
Salt 1 tsp
All spice powder 1 tsp
Oil ½ cup
Clarified butter 1 tbsp
Cloves 3-4
Black peppercorn 5-6
Blended onion 1 cup
Green chilies 2
Cream 100 ml
Milk ½ cup
Saffron water 1 tbsp
Cardamom powder ½ tsp
White pepper powder 1 tsp
Crushed fenugreek leaves1 tbsp
Cayenne pepper powder 2 tsp
Method:
Put clarified butter, salt, yogurt, ginger garlic, all spice powder, lemon juice on chicken and set aside. Heat oil add whole all spice then add blended onion and cook. Now add green chilies, chicken and cook until it gets tender. Add milk, saffron, cardamom powder, white pepper powder, cayenne pepper powder, fenugreek leaves and cook. Add ½ cup water for gravy and cook for 5 minutes. Add cream in last and serve.
Smoked Daal Makhni:
Ingredients:
Whole Black Lentil 1 cup
Clarified butter 4 tbsp
Ginger Garlic paste 2 tsp
Red Chili Powder 1 tsp
Turmeric ½ tsp
Coriander powder 1tsp
Cumin seeds 1 tsp
Sliced onion ½ cup
Grated ginger 1 tsp
Tomato puree 6 tbsp
Curd 3 tbsp
Flour 1 tsp
All spice 1 tsp
Butter 2 tbsp
Cream ¼ cup
Dried fenugreek leaves 1 tbsp
Salt to taste
Method:
Cook lentil with ginger garlic, salt, red chili, and turmeric and coriander powder. In last add all spice and dried fenugreek leaves. Mix flour, tomato puree and curd. Heat clarified butter add cumin seeds then add onion, ginger and fry till golden. Now add tomato puree mixture. Add this mixture over daal mixture then add butter, garnish with cream. Give coal smoke and serve.
