Lauki Chana Fry:
Ingredients:
White chickpea boiled 1 cup
Bottle gourd cubes 1 cup
Oil ¼ cup
Garlic paste 2 tbsp
Onion slices 1 medium
Tomato chopped 1 cup
Yogurt ¼ cup
Green chili 2-3
Fresh coriander 1 tbsp
Ginger 1 tbsp
Red chili crushed 1 tbsp
Salt as required
Cumin crushed 1 tsp
Turmeric powder 1/2 tsp
Coriander crushed 1 tsp
All spice power 1 tsp
Tamarind pulp 1/4 cup
Curry leaves 6-8
Red chili whole 6-8
Method:
Heat oil golden fry the onion. Add garlic paste, tomatoes and all spices cook well. Add tamarind pulp and yogurt cook for 3 to 4 minutes. Add chick peas and bottle gourd cook. Apply tarka of garlic, curry leaves and red chilies on it.
Aalu Palak Kay Kabab:
Ingredients:
Potato boiled mashed 2 cups
Spinach shredded 1 cup
Salt to taste
Black pepper 1 tsp
Chicken powder 1 tbsp
Eggs 2
Bread crumb as required
Oil as required
Method:
Mix all ingredients in bowl and form into kabab shapes. Dip in whipped egg then coat with bread crumbs. Cook on low flame in oil. When it turns golden in color remove and serve.
Sem Ka Pulao:
Ingredients:
Rice 750 gm
Green chili paste 1 tbsp
Green beans boiled 1 cup
Green peas boiled ½ cup
Onion slices 1 medium
Tomato chopped ½ cup
Garlic paste 1 cup
Salt to taste
Chicken powder 1 tbsp
Cumin 1 tbsp
Cinnamon sticks 4-5
Whole black pepper ½ tsp
Water as required
Fresh Coriander for garnish
Oil as required
Method:
Heat oil fry the onion golden brown. Add garlic paste and tomatoes. Add green beans, green chili paste, green peas and all spices, mix well. After that add water cook till boil comes. When done left for simmer.
Add coriander and serve.
