bacon wrapped maple glazed
roasted butternut squash
1.5kg butternut squash
12 or so bacon slices
¼ cup (60ml) Maple syrup
sea salt and cracked black pepper
Preheat oven to 400ºF.
Peel, core, and slice butternut squash evenly.
Wrap 1 slice of bacon around each squash piece and place in a baking dish. Paint on the Maple syrup, sprinkle with salt and pepper. Roast for 1 hour or until tender.
