Chicken Fajita Wraps:

Ingredients for marination:
Chopped cilantro ¼ cup
Oil 3 tbsp
Lemon juice 2 tbsp
Salt ½ tsp
Ground black pepper ½ tsp
Ground cumin ½ tsp
Red chili powder ½ tsp
Minced garlic 1 clove

Other ingredients:
Boneless chicken 300gm
Salt to taste
Black pepper as required
Sliced bell peppers 2
Sliced onion 1 large
Tortillas 4
Iceberg or lettuce to serve


Method:
Mix marination ingredients in a bowl then add chicken and leave for 30 minutes. Now cook chicken in a pan. In the same pan add onion and saute then add bell pepper, salt, black pepper and mix. Heat tortillas add vegetables and chicken put lettuce or iceberg roll it and serve with tomato salsa.

Spinach & Cottage Cheese Pie:

Ingredients:
Puff pastry as required
Cottage cheese 200 gm
Eggs 2
Cooked spinach 1 cup
Grated cheddar cheese 1 cup
Nutmeg ½ tsp
Salt to taste
Black pepper as required
Oregano 1tsp

Method:
Pre heat oven to 350 C and grease 9 inch pie plate. Then roll puff pastry and put it in pie plate. Combine both cheese, eggs, spinach, nutmeg, salt, black pepper, oregano and spread it on puff pastry. Then put puff pastry strips on top brush with egg and bake for 30 minutes.

Tomato Salsa:

Ingredients:
Diced tomatoes 3-4 medium
Diced onion 2
Chopped green chilies 2
Lemon juice of 1 lemon
Chopped cilantro ½ cup
Salt to taste
Black pepper as required
Dried oregano a pinch
Ground cumin a pinch

Method:
Mix all ingredients and well and serve after 15 minutes.
